Eating Wisely: Soup Featured

Hey y’all – I am taking over the article this week and I am going to be sharing a new little recipe that I literally made up on Thursday after daydreaming about cooler temperatures and soup. As the weather gets cooler (if it ever will) the germs start spreading and it seems like everyone starts getting sick. This soup is the perfect immune booster, detox, and of course it provides that warm cozy feeling we all look for in soup.


Turmeric is an interesting ingredient – it is strong, very bright in color, and great for your health. That is why this is the perfect add on to almost any dish. Okay, without further ado here is the soup for you.

 

INGREDIENTS:
3 Small Sweet Potatoes (peeled and diced)
3 Carrots (peeled and sliced)
1 Onion (diced
3 Celery Stalks (sliced)
8 Cups Vegetable Broth
1 Cup Jasmine Rice (uncooked)
1 Clove Garlic (minced)
2 Bay Leaves
½ tsp Turmeric
½ tsp Ground Ginger
¼ Fresh Parsley
1 tsp Oregano
Salt & Pepper to taste

 

DIRECTIONS:
(Crockpot)
1. Combine all ingredients in the crockpot – put on high and cook for 4-5 hours. Stirring occasionally.
(Stovetop)
1. Combine all ingredients in large pot – bring to a boil.
2. Reduce heat and simmer (covered or uncovered) stirring occasionally until vegetables are tender and rice is soft.
3. Serve up about a cup in a bowl and enjoy.


I have taken this to lunch 2 days in a row and I am still not tired of it – so delicious.


*Disclaimer: the jasmine rice does tend to keep drinking the broth when reheating put a little water in your bowl. Oh and it might turn your fingers yellow!
