No Bake Fruit Pizza

Here is another hot weather beater recipe that is not only yummy, but fairly healthy too. If you use low fat cream cheese and low fat/reduced sugar whipped topping, it is even fewer calories and fat. Experiment with fruit combinations such as blueberries, strawberries, and bananas for red, white, and blue pizza or arrange drained pineapple chunks and maraschino cherries on top and sprinkle with coconut. Be bold and add kiwi slices, marshallows, mandarin oranges, and granola. Whatever toppings you choose, you will be able to make this on the hottest summer days and enjoy a cool snack or dessert when you are finished. If you don’t want your sliced bananas/apples/etc. to brown, stir with a tablespoon or two of lemon juice and drain before placing on top.

1 ½ cups graham cracker crumbs

6 tablespoons butter, melted

4 oz. cream cheese, softened

3 tbsp granulated sugar

4 oz. frozen whipped topping, thawed

Assorted fruit, washed, peeled, sliced as desired

In a medium-size bowl, mix graham cracker crumbs with melted butter. Press mixture into 9” pie plate and set aside.

Using a hand mixer, mix together cream cheese and sugar. Fold in whipped topping.

Spoon mixture into graham cracker crust and spread evenly. Refrigerate at least 3 hours until set.

Arrange fruit on top and serve with extra whipped topping if desired.
