Have you noticed that your cakes made from bought mixes are not as thick and moist as they used to be? I sure have—prepared cake mix batter poured into a 9X13 cake pan barely cover the bottom, resulting in a thinner, undesirable cake.

To keep manufacturing costs down to not having to raise grocery store prices too much, most cake mixes contain less of the mixes than previously. A box of cake mix used to be 18.25 ounces, but now most are 15.5 ounces and some are even as light as 13.25 ounces!

Adding a bit of dry ingredients brings that  13.25 or 15.5 ounces up to 18.25 ounces and restores that thicker, moister cake you were used to. I found this Cake Mix Upsizer recipe online. Credit to @kikicoll A Taste of Nostalgia. Here is the recipe for the dry ingredients and the directions for using them.

Upsizer Blend

1 ½ cups all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

¼ teaspoon baking soda

 

Directions

Mix all four ingredients together and store in a sealed jar.

Add 6 tablespoons (3 ounces) of the mix to the 15.5 ounce cake mix or 10 tablespoons (5 ounces) to the 13.25 ounce cake mix. Mix with a spoon into the dry cake mix.

Continue with the recipe on the cake mix box.
