I made this for my roommates several times when I was in college. They always raved about how good it was. I think they just liked it because they didn’t have to cook those nights. We didn’t have a microwave back then, but I would wrap the extra servings individually in foil and bake about 10 minutes at 350 to re-heat.
I’ve never had bacon-wrapped filet mignon, so I can’t say if this tastes like it, but I can testify that this is a pretty yummy way to dress up ground beef or celebrate a special occasion on a budget.
Ingredients
2 pounds lean ground beef
2 cups cooked rice
1 cup finely chopped onion
1 tablespoon Worcestershire sauce
1-1/2 teaspoons salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
6 bacon strips
Directions
1. In a large bowl, combine the beef, rice, onion, Worcestershire sauce, salt, garlic powder and pepper. Shape into six round patties. Wrap a strip of bacon around each patty; fasten with a wooden toothpick.
2. Place in an ungreased shallow baking dish. Bake at 450° for 20 minutes or until meat is no longer pink.
3. Allow to rest a few minutes before serving.
Serving suggestion—dressed up green beans (casserole or almondine) and garlic mashed potatoes (we like Alton Brown’s best) would make dinner even more special.
