My daughter, Logan, sent me this recipe. She and I both like carrot cake and banana bread. I think we will try this soon.
Carrot Cake Banana Bread
3 medium ripe bananas, mashed
1 c brown sugar, packed
2 large eggs, room temperature
½ c coconut oil, melted
2 t vanilla extract
¼ c Greek yogurt
2 c all-purpose flour
2 t cinnamon powder + 2 T cinnamon powder
1 t baking soda
1 c shredded carrots
¾ c walnuts, chopped
1 16 oz carton cream cheese frosting
Combine flour, baking soda, and 2 t cinnamon powder and sift into a small bowl.
Combine bananas, sugar, eggs, vanilla extract, coconut oil, & yogurt and mix well.
Fold in sifted flour, baking soda, and 2 t cinnamon, mixing until an even batter consistency forms.
Fold in carrots and walnuts and pour into a parchment paper-lined loaf pan. Top with additional chopped walnuts, if desired.
Bake at 350 for 60-65 minutes or until a toothpick inserted in center comes out clean.
Remove from oven and let cool then remove from pan.
Combine frosting and 2 T cinnamon powder. Top loaf with frosting and additional chopped walnuts and carrot shreds, if desired. Cut into slices before serving.
