My family enjoys traditional foods for Thanksgiving and Christmas, but this pork tenderloin recipe looks like it would be good any time of year. I put together ingredients from a couple of recipes I found online. Who has tried something similar? Would you want to try it?
Ingredients:
3 lbs pork tenderloins or roast
2 cans of whole berry cranberry sauce
1/2 cup brown sugar
1/3 cup low sodium chicken broth
2 tablespoons apple cider vinegar
1 heaping tablespoon corn starch
1 teaspoon minced garlic
1 teaspoon salt
1 pinch black pepper
Directions:
1. Place pork tenderloins in a crock pot.
2. In a large bowl whisk together cranberry sauce, sugar, broth, vinegar, corn starch, garlic, salt and pepper. Pour over tenderloin in crock pot.
3. Cover and cook on high for 2 hours or low for 4 hours, or until it reaches an internal temperature of 165 degrees. Remove pork and place on a cutting board to rest for 5 minutes.
4. If desired add the sauce to a pot and add an additional tablespoon of corn starch mixed with a tablespoon of water and cook over medium high heat to thicken the sauce.
5. Slice and serve with sauce.
