Our daughter Lauren has been experimenting in the kitchen this summer and has developed a yummy breakfast casserole recipe. It is yummy not only at breakfast, but makes a good mid-morning snack too. We even had it as a side for lunch last Sunday. With only five ingredients, it goes together quickly and clean-up is easy too. If there are any leftovers, cover with plastic wrap or foil and refrigerate. We like to get a piece out of the fridge, put on a plate, and microwave one minute on high. Add chopped onion, peppers, spinach, or whatever you like to the sausage mixture before spreading onto the bottom layer of crescent rolls.

Ingredients

1 pound sausage (we prefer Jimmy Dean HOT)

1 8 oz package cream cheese, cubed

1 can Ro-Tel, drained

1 cup shredded cheese (whatever you have on hand)

2 cans crescent rolls

Directions

Preheat oven to 375 degrees. Lightly grease a 9×13 baking pan.

Unroll one can of crescent rolls. pinch edges of each triangle together slightly to make a solid crust and carefully transfer to 9×13 pan.

Brown, crumble, and drain sausage then return it to the skillet.

Add cream cheese and shredded cheese to the hamburger and mix until all ingredients are combined and cheeses are melted. You may have to turn the burner back on to finish melting the cheeses.

Add Ro-Tel to the mixture and stir to combine.

Pour sausage mixture over the rolls, spreading evenly.

Unroll second can of crescent rolls and carefully place it over the sausage mixture. Pinch edges of each triangle together slightly to make a solid crust. Sprinkle some cheese on top, if desired.

Bake 10-15 minutes or until the top begins to brown. Allow to cool slightly before serving.
