This is another good way to use your slow cooker to keep your kitchen cool and still enjoy home-cooked meals.

Ingredients

1 pound boneless skinless chicken breasts

1/2 cup low-sodium chicken broth

1/3 cup Italian Salad dressing

3 teaspoons fresh lime juice

3 teaspoons chili powder

1 1/2 teaspoons onion powder

3/4 teaspoon garlic powder

3/4 teaspoon paprika

3/4 teaspoon cumin

salt and pepper, to taste

hard taco shells or tortillas

Instructions

Place chicken breasts in your slow cooker.

In a small bowl whisk together the remaining ingredients (except hard taco shells or tortillas)

and pour them over the chicken in the slow cooker.

Cover and cook on HIGH for 2 ½ hours or LOW for about 5 hours.

Remove chicken from crock and shred using 2 forks or leave in crock and mix with a hand mixer. Cook for 30 more minutes.

Serve in taco shells or tortillas.

This recipe also works well in enchiladas, quesadillas, tostadas, burritos, taco salads etc.
