Ingredients
1 lb ground beef
½ lb Italian sausage, casings removed
½ lb pepperoni, sliced
1 small onion, chopped
2 cloves garlic, minced
1 (24 oz) jar marinara sauce
1 (14.5 oz) can diced tomatoes, drained
12 oz penne pasta
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tsp Italian seasoning
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
1 cup water or beef broth
Nonstick cooking spray
Serves: 6 | Prep time: 20 minutes | Cook time: 4–6 hours
How to Make: Brown the ground beef and Italian sausage with the onion in a skillet, breaking the meat into crumbles; drain excess grease and stir in the garlic for 30 seconds. Lightly grease the slow cooker and add the meat mixture, marinara, diced tomatoes, Italian seasoning, garlic powder, salt, pepper, and water or broth. Cover and cook on LOW for 4–5 hours. Stir in the uncooked penne, making sure it is mostly submerged, and cook on HIGH for another 25–40 minutes, checking early so the pasta does not become mushy. Stir in half the pepperoni, then top with mozzarella, Parmesan, and remaining pepperoni. Cover for 10–15 minutes until the cheese melts, then serve.
