I know some of you are already sampling Pumpkin Spice everything, so I thought I’d share this recipe I saw on Facebook from The Southern Belle Restaurant.

Slow Cooker Pumpkin Cobbler

2 cans pumpkin (not pumpkin pie filling)

1 can evaporated milk

3 eggs, beaten

1 tablespoon vanilla

½ cup granulated sugar

1 cup brown sugar

As much cinnamon as you want

1 box spice cake mix

1 stick butter, cut into slices

1 c chopped pecans

Put all but the last three ingredients in an oval slow cooker and stir until well combined. Sprinkle on the cake mix, but do not mix. Place butter all over the top of the cake mix. Sprinkle the pecans over the top of everything. (Place a layer of paper on top of the crock, not touching the top of the ingredients, and place the cover on it to hold it in place.)

Cover and cook on high for three hours. No peeking! Let it cook uninterrupted.
