Cooler temperatures have me thinking about baking. If you mastered my No Knead Milk Bread Recipe, try this easy bread next. It is a sweet bread that requires more ingredients and more work than the No Knead Milk Bread, which amounts to more time. However, it is definitely worth the extra prep and effort.

1 cup milk, at room temperature

1/4 cup sweetened condensed milk

1 egg

2 tablespoons sugar

2 1/4 teaspoons instant yeast

3 1/4 cups all-purpose flour

1 teaspoon salt

1/4 cup butter, softened

Egg Wash

1 egg, beaten

2 tablespoons milk (Whole makes a browner crust due to the fat, but you can use a lower fat version too.)

3 tablespoons butter, softened

3 tablespoons sweetened condensed milk

Combine the milk, condensed milk, egg, sugar, and yeast in a bowl. Mix well. Add the flour and salt. Mix until a dough forms. Add the butter and stir until thoroughly combined. Transfer the dough to a lightly floured surface.

Knead the dough until smooth and elastic. (Dough is ready when it doesn't tear when stretched.) Roll into a ball and place into an oiled bowl. Cover and let it rest in a warm place for 1 hour or until it doubles in size.

Punch the air out of the dough. Divide the dough into two equal pieces. Roll out one of the pieces and flatten the dough into a long rectangle shape, then roll it up tightly from one of the short edges. Seal the edges by pinching slightly with your finger and thumb. Repeat with the other half of the dough.

Cut each dough roll into seven equal pieces. Place seven pieces in a parchment paper lined loaf pan. Repeat with the second half of the dough in another loaf pan. Cover and let the dough rest for 45 minutes.

Brush the dough with an egg wash made with 1 egg and 2 tablespoons of milk. Bake in a preheated 350-degree F oven for 20 to 22 minutes.

Make the glaze by combining the softened butter and sweetened condensed milk. Let the bread cool slightly before brushing with the glaze.

Sprinkle some cinnamon and sugar over the rectangle before rolling it up to make cinnamon bread. Continue as directed.

Roll half the dough into a wider rectangle. Sprinkle cinnamon and sugar over the rectangle before rolling it up. Use kitchen scissors to cut each roll into 10 slices and place cut side down on a parchment lined baking sheet. Continue as directed, adjusting baking time—check after 10 minutes for doneness. Add some powdered sugar to the glaze if you want it sweeter.

You can make this bread more savory by simply adding some chopped onions, cooked and crumbled sausage, pepperoni, or other ingredients to the rectangle before rolling or sprinkle some Everything Bagel topping on the loaf before baking. Experiment with your favorite add-ins and toppings. Try these without the glaze.
