Sweet & Savory SPAM Fried Rice with Pineapple

Serves 4

Ingredients:

  • 1 can SPAM (any variety), diced into small cubes
  • 2 cups cooked rice (leftover rice works best)
  • 1 small can pineapple tidbits, drained (reserve a little juice)
  • 1 cup frozen peas & carrots (or canned, drained)
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon cooking oil (vegetable or canola)
  • 1 teaspoon sesame oil (optional, for flavor)
  • 1–2 green onions, sliced (optional garnish)

Instructions:

  1. Cook SPAM: Heat a large skillet or wok over medium-high heat. Add oil, then SPAM cubes. Fry until golden brown and slightly crispy. Remove and set aside.

  2. Scramble eggs: In the same pan, add beaten eggs and scramble until just set. Remove and keep with the SPAM.

  3. Stir-fry veggies: Add peas, carrots, and pineapple tidbits to the pan. Stir-fry for 2–3 minutes.

  4. Add rice & sauce: Stir in rice, breaking up clumps. Add soy sauce and a splash of pineapple juice for sweetness. Drizzle with sesame oil if using.

  5. Combine: Return SPAM and eggs to the pan. Mix well and heat through.
